  • Grilled Lobster Tails – I had to throw lobster tails in here. In Maine, we do not really eat lobster tails, but I know most of the country does, so I had to throw this in. Ingredients: 4 lobster tails, 4 tablespoons melted butter, 1 tablespoon lemon juice, 1 teaspoon garlic powder, 1/2 teaspoon salt, 1/4 teaspoon black pepper -Directions: Preheat your grill to medium-high heat. Cut the top of the lobster shells lengthwise down the middle, being careful not to cut all the way through the flesh. Brush the lobster tails with the melted butter, lemon juice, garlic powder, salt, and pepper. Place the lobster tails on the grill and cook for 8-10 minutes, until the shells are bright red and the flesh is opaque. Serve immediately.

  • Lobster Bisque -Ingredients: 4 cups fish stock, 1 pound cooked lobster meat, 1 cup heavy cream, 1/2 cup dry white wine, 1/4 cup brandy, 2 tablespoons tomato paste, 2 cloves garlic, minced, 1 medium onion, chopped, 1 stalk celery, chopped, 2 tablespoons butter, 1 tablespoon olive oil, salt and pepper to taste -Directions: In a large pot, heat the butter and olive oil over medium heat. Add the onion, celery, and garlic and cook until the vegetables are soft, about 5 minutes. Add the lobster meat, fish stock, white wine, tomato paste, and brandy. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes. Stir in the heavy cream and season with salt and pepper to taste. Serve hot.

  • Lobster Mac and Cheese -Ingredients: 1 pound cooked lobster meat, 8 ounces elbow macaroni, 2 tablespoons butter, 2 tablespoons all-purpose flour, 1 cup milk, 1 cup shredded cheddar cheese, 1/2 cup breadcrumbs, 1/4 cup grated Parmesan cheese -Directions: Preheat your oven to 350°F. Cook the macaroni according to package instructions. In a large saucepan, melt the butter over medium heat. Add the flour and cook for 1-2 minutes, until the mixture is bubbly. Gradually add the milk, stirring constantly, until the mixture thickens. Remove the saucepan from the heat and stir in the cheddar cheese until it is melted. Add the cooked macaroni and lobster meat to the cheese sauce and mix well. Transfer the mixture to a 9×13-inch baking dish and top with the breadcrumbs and Parmesan cheese. Bake for 20-25 minutes, until the top is golden brown. Serve hot.
